52 Weeks of Cooking Challange: Week 1: Appetizer

So a friend is doing the reddit 52 weeks of cooking challange.  Each week is a new theme, course, ingredident or idea.   The first week was appetizer.
I got into the game late so I cheated ;) I used what I was already planning on doing which were a soup and salad.  Technically these are found under some menu's appetizer header so it works for me!  Simple, yet delicious.  My favorite way.

 Remember I am doing the Whole30  Eating Program as well so everything is compliant to the no grains, no added processed sugar, no dairy diet.

First we have Beet Soup. Yumm Beets.  Beets are one of my favorite food I had beets 5 out of 7 days last week.  Then there was Mixed Green Salad with pears and pecans and homemade vinaigrette.  Finally Avocado and Grapefruit Salad with homemade raspberry vinaigrette. More of my favorite things.  Florida Grapefruits are in season, and even though my favorite way to enjoy them is picked from my mom's tree, promptly squeezed and mixed with vodka, this will have to do as alcohol is out for the next 30 days too :(

New Year New Me

Well 2013 is officially upon us.  I like the idea of a fresh start, getting goals and achieving milestones.  In my 27 years of life their could be a lot to complain about, but there is more to me grateful for.  I am resolving this year not to change but to become the best version of ME possible.  I have summed my aspirations into 4 categories to work on:
  • 1. My relationships
  • 2. My health
  • 3. My education/professional life
  • 4. My finances
I plan to blog at least weekly about my strategies for accomplishing greatness.  Including exercise reports, meals plans, and financial help.
